Lyon, France – The culinary landscape of Lyon continues to flourish, with four new restaurants earning a place in the esteemed Michelin Guide. This announcement comes ahead of the highly anticipated Michelin star revelations, set to take place on Monday, March 16th, in Monaco.
New Lyon Restaurants Enter the Michelin Guide
The latest update to the Michelin Guide features 30 new establishments, four of which are located in Lyon. The selection showcases a balanced representation of both male and female chefs, further enriching the city’s gastronomic diversity.
- Romane Veyrac, Chef at Le Rousille (Lyon 6th): Formerly a sous-chef, Veyrac reinterprets classic cuisine with dishes that are both simple and sophisticated.
- Pierre-Michaël Martin, Chef at Chez Pimousse (Lyon 1st): Established five years ago, Chez Pimousse offers meticulous dishes and surprise menus in a bright, country-villa-like setting.
- Emily Dader, Chef at Trèfle (Lyon 2nd): This vegan restaurant makes its debut with creative, refined, and aromatic plant-based cuisine.
- Noé Saillard, Chef at Murmures (near the Opera): Saillard’s offerings at Murmures are described by the guide as ‘travel-inspired’ dishes.
Lyon Restaurants Honored with Bib Gourmands
In addition to the new entries in the main guide, the 2026 Bib Gourmand selection has also been unveiled, recognizing 75 new French tables. Lyon is prominently featured in this category as well:
- Accentué (Lyon 7th): Led by Chef Ashwin Vijaykumar, with Jennifer Palopoli managing the dining room, Accentué promises a culinary journey for its guests.
- Cinq Mains (Old Lyon): This modern and inviting bistro is overseen by brothers Thibault and Grégory Cuilleron.
- La Meunière (Presqu’île): A true Lyonnaise ‘bouchon’ with over a century of history (opened in 1921), now under the direction of Chef Olivier Canal.
- La Virée: Already recognized as the best bistro of 2025 by Fooding in November, Chef Matthias Lallemant’s La Virée receives a Bib Gourmand for its free, clever, and generous cuisine in a 70s ambiance.
