Écully, April 12 – Nathan Sinapian-Pic, the son of the acclaimed three-Michelin-starred chef Anne-Sophie Pic, is set to open a pop-up restaurant called ‘Héritage’ in Écully. This ambitious project, part of his final year Bachelor of Culinary Arts studies at LYFE Institute (formerly Paul Bocuse Institute), will run from April 27 to May 8, 2026. Sinapian-Pic and 15 fellow students aim to deliver a comprehensive gastronomic experience inspired by the world of artisanal crafts.

A Culinary Journey into Craftsmanship

The ‘Héritage’ restaurant, located at the LYFE Institute in Écully, will immerse diners in the often-unseen world of artisans. The concept focuses on highlighting the trades that contribute to the dining experience, such as cabinetmakers, potters, glassblowers, and florists. “We don’t have a huge number of tableware partners, but we represent the crafts through the dishes,” explained Nathan Sinapian-Pic.

This sensory immersion invites guests on a journey, from the raw heat of a forge to the delicate artistry of a glassblower’s workshop, particularly evident in the dessert offerings. The dining room ambiance will further enhance this theme, featuring collaborations with partners like Maison Révol, which designed some of the plates, and a cheesemonger presenting traditional tools. “We really want to showcase them,” added the student chef.

The ‘Héritage’ Experience: Menus and Service

The restaurant will offer two distinct dining formats. In the evenings, guests can enjoy a six-course gastronomic menu priced at €45 (excluding drinks), designed to explore different artisanal universes. The drinks menu will include a selection of partner wines and four cocktails, two of which are non-alcoholic.

For lunch, ‘Héritage’ provides a more accessible option with elaborate sandwiches, also linked to the artisanal theme. This offering is designed to appeal to a broad audience, including students and artisans on campus. A unique aspect of the project is that the chefs will also be responsible for table service. Nathan Sinapian-Pic, drawing on his previous experience, plans to focus more on front-of-house duties to support his classmates. “I will be more in the dining room, where I already have experience, and I will share it with my classmates,” he stated.

A Vision for the Future of Gastronomy

This two-week venture is more than just an academic exercise; it’s an opportunity for these young talents to experiment, take risks, and articulate their culinary vision. Their approach emphasizes a gastronomy where each dish tells a story, encompassing not just taste but an entire ecosystem of craftsmanship and dedication.

The project follows a significant event for the Pic family, as Anne-Sophie Pic was recently elevated to the rank of Officer of the Legion of Honor at the Élysée Palace in March, accompanied by her husband David Sinapian and their son, Nathan.
