“If there are three red crosses in a column, we don’t even discuss it and they close us down,” Muriel Delzeux stated, suggesting that the terms used in the Prefecture’s official statement might have been exaggerated compared to the actual deficiencies found. She emphasized, “We do not endanger the health of our customers.”
