Further violations included “the absence of self-checks on surfaces, the absence of hazard analysis and control of risky processes; – non-compliance with food preservation temperatures; – the presence of expired foodstuffs; – poor storage and preservation conditions for raw materials and processed foodstuffs; – the absence of food traceability.” In total, approximately fifty points requiring modification were listed in the closure order.
Discreet Reopening and Name Change
After several weeks, the establishment was permitted to reopen. However, it did so under the new name ‘Le Brasier’. This change has been implemented discreetly, with a temporary banner on the facade and the previous website being offline. The restaurant’s phone number still refers to ‘Le Verdi’, indicating a gradual transition. The restaurant remained unreachable for comment regarding the name change and the hygiene control that led to its closure.
The closure of ‘Le Verdi’ had caused considerable surprise among regulars and residents of the lively Brotteaux neighborhood, known for its bars and restaurants.
