Lyon, August 21 – A new and highly anticipated gastronomic restaurant, Le Pavyllon, is finally set to open its doors in Lyon. Located at Place Bellecour, the establishment will welcome its first guests on Tuesday, September 8, 2026. This project, led by the acclaimed triple Michelin-starred chef Yannick Alléno, takes over the premises of the former L’Institut restaurant.
A Delayed Opening for a Grand Project
The site, previously a training ground for students of Institut Lyfe (formerly Institut Paul-Bocuse), is now under the vision of Chef Alléno. In November 2024, he unveiled his concept of a “gastronomic counter,” a successful model already implemented in Monte-Carlo, Monaco, and London. The initial plan was for the restaurant to open on December 8, 2025, at 20, Place Bellecour. However, construction work extended beyond the initial schedule, leading to the revised opening date.
Le Pavyllon aims to offer a unique culinary experience, combining high gastronomy with an interactive and engaging atmosphere. The concept emphasizes direct interaction with the culinary process, a hallmark of Alléno’s “gastronomic counter” approach.
