Alliance Paris Secures Coveted Second Michelin Star

Paris, March 19, 2026 – Alliance, the esteemed restaurant located on Rue de Poissy in the heart of Paris’s 5th arrondissement, has been honored with its second Michelin star. This prestigious recognition from the Guide Michelin 2026 celebrates a decade of culinary excellence, where precision, subtlety, and sincerity define the establishment’s unique gastronomic language.

The announcement, made during a ceremony in Monaco, was a moment of profound emotion for the co-founders. “Tears in our eyes, a sincere embrace between Toshi and me. Suddenly, ten years of work, lunch and dinner, culminated in this consecration,” shared Shawn Joyeux, still visibly moved. For the duo, this distinction represents a pivotal shift. “Moving from one to two stars is a colossal step. We are entering a much more exclusive dimension,” Joyeux added.

An Indissoluble Duo: Omiya and Joyeux

Alliance was born from a transformative encounter between Toshitaka Omiya, a Japanese chef trained by culinary luminaries such as Philippe Legendre, Alain Passard, and David Toutain, and Shawn Joyeux, a front-of-house expert and sommelier with experience in renowned Parisian and Swiss establishments.

Their meeting at L’Agapé immediately revealed a shared vision: a common approach to their craft, the same exacting standards, and a firm belief that gastronomy should always be an expression of truth. For ten years, they have navigated challenges and triumphs together, forging a bond that transcends words. “We are deeply committed. Alliance is an adventure of profound humanity,” Joyeux stated. Their partnership has become a defining signature: an intimate, unbreakable alliance.

A Human-Centric Art of Living

This second star also acknowledges a significant evolution in Toshitaka Omiya’s culinary philosophy. In recent years, the chef has gravitated towards simplicity, lightness, and refinement. “The dishes are refocused for even greater simplicity and clarity. Nothing is written before it is created; it’s instinctive sensibility.” His cuisine is an art of the sensory and the ephemeral, where each plate is an unveiled expression.
