The flour hangs in the air like snow. Thick, white, everywhere. On the floor, on the shelves, and in the hair of Stanisław Nowak, who for forty-five years has been waking up at three in the morning to bake bread for his district. He is seventy-two years old, but his hands – wrinkled, covered with burn scars – move with the precision of a surgeon.

A Mother’s Anguish, a Global Vision

Bénédicte Astier knows the chilling grip of fear that comes with a child’s severe allergic reaction. Her daughter, Margot, allergic to milk, experienced anaphylactic shock after a school meal, an incident that landed her in intensive care. While Margot recovered, the terrifying ordeal ignited a spark in Bénédicte. During those agonizing hours, a profound question echoed in her mind: how could the risks of dining out be mitigated for the millions of people worldwide who live with severe allergies?

“I had the idea for a small tool to detect allergens on the plate,” Bénédicte recounts. Serendipitously, her employer of 20 years, Biomérieux, a pharmaceutical giant where she served as regulatory and quality director, launched an intrapreneurship program. Bénédicte, a health engineer, seized the opportunity.

From Corporate Ladder to Startup Leap

Among a hundred initial projects, Bénédicte’s vision was one of five selected. For a year, with the support of two colleagues, she meticulously refined her concept, overcoming numerous hurdles. By the end of 2024, the spin-off company, Allergen Alert, was born, transforming Bénédicte from an intrapreneur to a full-fledged entrepreneur.

This transition meant leaving behind a stellar career and a comfortable position to embrace significant risk. She candidly admits to a challenging year, describing it as a “crossing of the desert.” Yet, fueled by the unwavering support of patients and mentors from emlyon venture labs and Le Zesteur incubator, the 49-year-old Bénédicte rapidly acquired new skills, honed her expertise, and conquered the difficulties.

Allergen Alert: A Pocket-Sized Lab Captivating International Audiences

In October 2025, after arduous efforts, she successfully closed a 3.8 million euro funding round. “I accumulated all the ‘red flags’ for investors: being a woman, over 40, and in the tech world,” she now jokes with a smile.

But perseverance paid off. The mini-pocket laboratory made a powerful impression at the CES in Las Vegas earlier this year, garnering global visibility for the deeptech startup with 470 press mentions.

A Lifesaving ‘Seatbelt’ for Allergic Individuals

The functional prototype is slated for beta-testing later this year, with initial sales to individuals, collective catering services, and Michelin-starred restaurants projected for 2027.

“The manufacturing of the device will be outsourced to a partner specializing in medical devices, and we have a production line for the single-use diagnostic pouch that detects nine allergens (peanuts, wheat, milk, tree nuts, eggs, fish, crustaceans, soy, sesame) as well as gluten,” Bénédicte Astier explains. She is already looking ahead to a new Series A funding round in 2027 to support industrialization and market launch.

Bénédicte likens her solution to a “seatbelt” – a device that can genuinely save lives and empower millions to reclaim their social lives. The relentless dedication to Allergen Alert means she has little time for herself, but as the executive and politician Elisabeth Moreno once whispered to her, “You just have to enjoy the journey.”
