Tom Meyer to Design New Menu for Madame Rêve in Paris

Paris, June 24, 2026 – Hôtel Madame Rêve, located in the heart of Paris’s 1st arrondissement, has announced that two-Michelin-starred chef Tom Meyer will be joining their team as a consulting chef. Meyer, currently of La Chèvre d’Or in Èze, will collaborate with executive chef Benjamin Six to create a new culinary experience for the hotel’s upcoming restaurant, scheduled to open in September 2026.

A Return to the 1st Arrondissement

This collaboration marks a significant return for Chef Meyer to the district where he previously established his culinary identity. In 2021, he opened Granite in the 1st arrondissement, an establishment that quickly earned a Michelin star and was celebrated for its precise and distinctive cooking style.

Contemporary French Cuisine

At Madame Rêve, Chef Meyer will craft a contemporary French menu, characterized by elegance, creativity, and a strong culinary personality. The new offerings will emphasize accurate flavors and precise seasoning. This new French-inspired dining option will complement the existing international influences found at the hotel’s other venues, La Plume and ROOF.

Renovations and Opening Details

The new restaurant will occupy the space currently known as Kitchen. The area will undergo renovations in August to prepare for its transformation. The grand opening is slated for early September 2026.

Laurent Taïeb, owner of Madame Rêve, stated, “Since its opening, Madame Rêve has been a dynamic place. For our fifth year, with our executive chef Benjamin Six, we wanted to enrich the gastronomic experience with contemporary French cuisine, extending and affirming our restaurant offerings. Naturally, we thought of Tom Meyer to sign this new menu. His modern cuisine and his roots in the 1st arrondissement echo the offering we want to provide to our clients.”

Madame Rêve’s Evolving Gastronomic Identity

With this new venture, Madame Rêve continues to develop its gastronomic identity within the historic former Post Office of the Louvre building, which has been transformed into a hotel, a vibrant living space, and a culinary destination in central Paris. The hotel aims to solidify its position as a leading culinary hotspot in the city.

This move is part of Madame Rêve’s ongoing commitment to providing an exceptional and diverse dining experience for its guests, further enhancing its reputation as a premier destination in the French capital.
